Sopapillas

Ingredients
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons shortening
3/4 cup water
oil (for frying)

Directions
1. Sift together flour, baking powder and salt.
2.Cut shortening in until mixture is a rough texture.
3. Gradually add warm water.
4.Mix to form dough.
5. Knead until smooth.
6. Cover and let stand for 20 minutes.
7. Start oil heating (375-400 degrees).
8. On a lightly floured board, roll dough thin.
9. Cut into 3 inch squares.
10. Fry a few at a time, turning when golden and puffed up.
11. Drain on paper towels.
12. Serve immediately.

The History of February

So many things come to mind when I think of the month of February. There are several holidays and historical figures’ birthdays. People like George Washington, Abraham Lincoln, Longfellow— I could go on. Valentine’s Day is in February; a time to appreciate our family and friends. There are also lots of important events that have happened in the month of February. On the first of February, our Supreme Court met for the first time (no pun intended).  Also the last of the Nazis surrendered to Russia in 1943. So we see that February is a time when many people remember each other and our nation’s history.

A Word From Our Principal

As we walked through the doors of Lighthouse Christian Academy on August 19th, 2010, there was an overwhelming sense of excitement. New principal, new teachers, new students, new classes – this year was definitely a year of change. And as we entered into the first day of school, I challenged each of you to seize your opportunity.

New Newsletter Contest - Results

Starting November 11 and running through November 19, the yearbook staff held a school wide contest to find a new newsletter name. The students put their thinking caps on and turned in some very creative and interesting suggestions! On November 19 and 22, the yearbook staff got together and chose the top three most creative names.

A New Year Calls for New Things!!

With this new school year, Lighthouse Christian Academy has introduced a lot of new things! From a couple new teachers, to new programs and "clubs" to make school a lot more fun, LCA has a lot of exciting, new things going on!!

Congratulations!!

We would like to say a big congratulations to our Tech students, Jeron Rotert and Casey Rochester!! Jeron, who is a junior at LCA, is now the Tulsa Tech Business Management/Entrepreneurship DECA Historian. Casey, who is a senior at LCA, is now the Class President of the organization Health Occupations Students of America!! Keep up the good work!!!
